Item # M02 Country Lentil (Vospov) Soup
Included in Kit: Packet 1, 2 Makes 8 cups
(not included: 2 TBLSP olive oil )
Step 1
- Pour 8 cups water Into large saucepan, and bring to a boil.
- Add contents of package #1 and adjust heat to a simmer.
step 2
- Simmer contents, uncovered, for 30 minutes, stirring occasionally.
- Lentils should be slightly “al dente” but not mushy
- Add more water if needed during this period, to maintain liquid above the level of the lentils, as they will absorb water while cooking .
Step 3
- Add Packet #2 + 2 TBLSP olive oil + 4 cups more water to the lentil mixture. Stir and blend all ingredients.
step 4
- Simmer soup for 30 minutes more.
- Cook until rice kernels are soft.
step 5
- Add more water to soup if you want it more “juicy”, especially if you are reheating this soup as a leftover, as it will thicken as it sits. Enjoy!
